Recipe 1:
Fijian Chicken
Curry
Origin: Fijian Period: Traditional
Ingredients
1 whole chicken, meat cut into bite-sized pieces
1 small onion, chopped
4 cloves of garlic, minced
3 small chillies, minced
1cm ginger, peeled and grated
salt to taste
2 tbsp of olive oil
1/2 tsp turmeric
1/2 tso cumin powder or seeds
1/2 tsp mustard seeds
1/4 tsp fenugreek seeds
1 cinnamon stick
6 cloves
4 whole cardamoms, crushed
2 tsp curry powder or paste
6 curry leaves
1 tomato, chopped
water or chicken stock (if needed)
coriander leaves, chopped, for garnish
Add the olive oil to a medium pot and heat, then add the onions, seeds, cinnamon stick, cloves, cardamoms and curry leaves. Stir and cook for two minutes then add the garlic, along with the turmeric and curry powder. Stir and cook for a minute before adding the chicken and salt. Stir, cover and cook on medium, stirring every five minutes or so. After 15 minutes add the tomato. If the chicken begins to stick add a little water or stock. Cook for a further 30 minutes, transfer to a bowl, and garnish with coriander leaves. Serve with rice.

Recipe 2:
Simple Spaghetti
(Serves 7)
Ingredients
1 lb ground beef (you can use lean)
2 medium onions, chopped (1 cup)
1 can whole tomatoes (28 oz)
1/2 cup water
1 8 oz can tomato sauce
1 4 oz can mushrooms (optional)
2 tsp. salt
1 tsp. sugar
1 tsp. chili powder
7 oz (1/2 a small bag) of uncooked spaghetti
1 cup shredded cheese, cheddar or mozzarella
1 4 oz can mushrooms, drained (optional)
1 cup bell pepper (optional)
In a large skillet cook and stir your hamburger and onions until hamburger is light brown; drain. Stir in tomatoes (with liquid), water, tomato sauce, salt, sugar, chili powder, mushrooms, bell peppers and spaghetti; break up tomatoes with fork.
Heat to boiling and then reduce heat. Cover and simmer, stir occasionally, until spaghetti is tender, about 30 minutes. You might need to add a little extra water. Sprinkle the top with cheese. Cover and heat until cheese is melted.
To make lower in fat use fat-free cheese and lean ground beef.
